1. Queensland has nice beaches around Surfers Paradise and Coolangatta. Victoria has great beaches too around the surf coast, Torquay and around that area. It depends what kind of things you want to be doing at the beach.
2. can't go past the gold coast and the sunshine coast. further up north in queensland is beautiful too .. near the whitsundays
