I reckon the beaches between Port Macquarie in NSW north to about Agnes Waters/Town of 1770 in Queensland are pretty hard to beat (leaving out Surfers Paradise, which is high rise hell).
It depends what type of beach you're looking for. If you're looking for a "surfing beach" then I'd recommend, as everyone else has, Surfers Paradise, which is appropriately named. Also Byron Bay. It's basically a hippy town and really really interesting. It has a beautiful beach and one of my favourite places in Australia. There's plenty of small surfing beaches down the east coast - Coffs Harbour, Port Macquarie etc. If you want to go to Sydney then I'd say Bondi, Manly, Cronulla Maroubra. Personally, I think bondi is an overrated tourist trap. I think Bronte or Cronulla has the best beaches in Sydney. And if you go down past Sydney there's Wollongong, Kiama and more further down. If you're looking for a kind of... island beach. With clear water, white sand, then I'd recommend the Whitsundays. I went there last summer and it was absolutely beautiful, enjoyed every minute of it. I'm not a "surf" person. I loved just floating around in the water (which was perfect tempterature) and laying on the sand. You've got to make sure you go there the right time of year though because there can be stingers. I went on a Great Barrier Reef snorkel while I was there and one of my friends got stung by a stinger (it was hilarious).
